Most mornings, if I eat breakfast at home, I’ll arrive at the office much later than I care to, so I take it with me.
But I’ve always drawn the line at cereal, which almost always results in a spill when I try to enjoy it on the go.
Then last week happened…
It’s the morning after Christmas in Barbados. It’s raining but beautifully warm outside, and it’s time for breakfast.
Today, I want pancakes–with a tropical twist; a pineapple-coconut version comes to mind.
This time, though, the pancakes will be perfectly round without me toiling away in the kitchen. Why?
This morning I woke up and felt like having something interesting for breakfast.
And just like that, I thought of apple pancakes, which I had never had before. After a quick Google search, I realized that the from-scratch recipes weren’t quite going to work. Reasons? Limited time and a lack of domestic fortitude.
So I took matters into my own hands and within 20 minutes, my tummy was happy.
So happy, I thought I would share the recipe with you.
